I created this recipe after running into a Woman at Trader Joe's who was picking up a Delicata Squash.
I haven't had great luck with cooking Squash in the past,
but this woman looked like she knew something about this mystery squash.
I inquired, "How do you make these?"
She said, "oh they are so easy, you bake them and the leave the skins on they are edible!
And if you like pumpkin seeds,
you'll want to roast these seeds."
I was sold!
You don't have to peel it!?
And the seeds (roasted) are good to eat too?
